In today's society, chipotles are predominantly sourced from Mexico, where they produce two different varieties of the spice: morita, which is most commonly found in the United States, and the larger meco, which is mainly used domestically. Morita means "small mulberry" in Spanish and is grown primarily in the state of Chihuahua; it is typically darker in color with a reddish-purple exterior. They are smoked for less time and, in many cultures, considered inferior to the meco. The meco, also known as chili ahumado or típico, is grayish tan with a dusty-looking surface; some say it resembles a cigar butt. This pepper variation tends to be smokier in taste and is the preferred chipotle of many natives. They are sometimes referred to as chili navideño because they are reconstituted and stuffed to make a traditional dish that is most popular at Christmas time among Mexican locals. Heat the oil in a large pan over a low-medium heat, then fry the onion for 7-8 minutes until soft. Stir in the garlic, then cook for 1 minute. Add the toasted spices, chipotle paste/whole chilli, tomatoes, vinegar, milk and sugar. Season, bring to the boil, then simmer, covered, for 20 minutes. There are two classic varieties that are the most “normal”, and then some that are not known as chipotles, but are of the same dried chili family:tablespoons chili powder (I like to use a blend of ancho and guajillo powder, but use your favorite blend, or try this homemade chili powder blend) Real mayonnaise will give you much more flavor. You can rehydrate chipotles by placing them in warm water for an hour. This will make it easier to dice them up and add them to your favorite recipes. If using fresh tomatoes, chop them and add them to the pot. Cook about 10 minutes to let them break down. If using canned fire roasted tomatoes, just add them to the pot and go to the next step. If you like a bit of sweetness with your chipotle chili, add a couple tablespoons of brown sugar when you add the chili powders. Let the sweetness simmer through the whole pot. It's a nice addition.
